Royale Upgrade-Cassis Cordials
We are in full harvesting season with the different produce in our gardens. As we tidy up our fields in preparation for the fall season, either preparing for new plantings or adding amendments to replenish mineral-depleted soils in preparation for the colder weather coming our way, it is also the season to savor the fruits of all our labor.
We love quiet evenings spent in the backyard, enjoying the sights and sounds of the countryside while savoring our favorite fingerfoods and drinks with friends and family. We are now looking forward ot our next production of Creme de Cassis and Cassis Syrup. Adding our SeemsCrest Farms Creme de Cassis to your favorite wine or Sparkling wine is an easy way to make your cocktail hour elegant, celebratory, and even a bit classic! Along the line of the tried and true French 75, Bellini and Mimosas, the Kirs incorporate our “forbidden fruit” into formidable beverages sure to impress your friends! Here are a few cocktail recipes for you to try:
French 75
For perspective, the French 75 cocktail requires gin, fresh lemon juice and sugar in addition to Champagne
Ingredients
1 oz gin
½ oz fresh lemon juice
½ oz simple syrup
3–4 oz chilled brut Champagne or other dry sparkling wine
Lemon twist, for garnish
Ice
Kir
Dating back to the 19th century, and further popularized after World War II, Kir is simple and refreshing cocktail that combines crème de cassis (blackcurrant liqueur) with a dry white wine. Aligoté, a Burgundy wine, is traditionally used. Sauvignon Blanc is also a great option.
Ingredients
1 part crème de cassis (blackcurrant liqueur) approx. 30 ml
125 -250ml chilled dry white wine, such as Bourgogne Aligoté or Sauvignon Blanc
Kir Royale
This is a Kir with a celebratory twist. It replaces the white wine with Champagne (or Prosecco).
Ingredients
1 part crème de cassis (blackcurrant liqueur) approx. 30 ml
125 -175ml chilled Champagne or Prosecco
American Kir or Kir Imperial
A variation that substitutes cassis with a raspberry liqueur, like Chambord, and uses either sparkling wine or Champagne. Some may also use peach or orange liqueur.
**Be sure to pour the liqueur into the glass first, followed by the wine or Champagne, which ensures the ingredients will mix naturally. A bit more or less cassis can fine tune the cocktail to one’s individual taste, turning any glass of bubbly into a special occasion and turning heads at your next party

15ml Black Currant syrup
5ml Honey
5ml Lime juice
175ml Seltzer Water
Optional: fresh Lime wedges or rounds
